One origin involved in this Robusta development is Nhamlug, Tha Wang Pha District, Nan Province, where NorNan Lab & Roastery has worked with local coffee and Advanced Fermentation to explore how Robusta from the area can express different characteristics.
The significance of this coffee therefore extends beyond its geographical origin. It also reflects a producer-driven approach that applies fermentation knowledge to expand the possibilities of Thai Fine Robusta.
NorNan Lab & Roastery and the Development of Fine Robusta in Nan
NorNan Lab & Roastery, also known as น.น่าน Lab & Roastery, is a coffee roastery and coffee developer based in Nan Province.
Led by Peeranaris “Jack” Ponghathaikul, the team works across roasting, quality evaluation, and Coffee Processing while collaborating with coffee producers in the region.
What makes NorNan Lab particularly interesting is that its work goes beyond simply roasting coffee.
The team also experiments with Processing to understand how different raw materials can develop distinct characteristics. This includes selecting yeast cultures, controlling fermentation environments and temperatures, determining fermentation duration, and monitoring changes in the coffee throughout the process.
One approach that clearly reflects this philosophy is the development of Fine Robusta through 960 Hours Fermentation, an extended fermentation process designed not simply to create an intense fermentation character, but to give Aroma and Flavor time to develop gradually in layers.
What Is 960 Hours Fermentation? Behind the 40-Day Fine Robusta Fermentation
One of the most distinctive aspects of this Fine Robusta development in Nan is 960 Hours Fermentation, equivalent to approximately 40 days, developed under NorNan's Advanced Fermentation Series concept.
The process brings together three main elements: Selected Yeast Culture, Carbonic Maceration, and Cold Fermentation.
The objective is to allow fermentation to progress slowly and under controlled conditions, giving Aroma and Flavor time to gradually develop in layers throughout the process.
Importantly, 960 Hours Fermentation does not simply mean placing coffee into fermentation and leaving it untouched for 40 days.
It requires the management of multiple variables throughout the fermentation period to find an appropriate balance between Flavor complexity, cleanliness, and the structural characteristics of the coffee.
Selected Yeast Culture in Fine Robusta
The first component is Selected Yeast Culture, in which specific yeast is used to help manage microbial activity during Fermentation and develop greater aromatic complexity.
Using selected yeast allows producers to have greater control over the direction of fermentation compared with relying entirely on naturally occurring microorganisms.
This becomes particularly important when Fermentation takes place over an extended period, where consistency and the ability to monitor the process become increasingly important.
Carbonic Maceration and Flavor Development
Carbonic Maceration is another component of the Process.
It creates an environment containing carbon dioxide, or CO₂, allowing Fermentation to take place under conditions different from conventional open fermentation.
When combined with Selected Yeast Culture, this technique becomes part of an environment designed to encourage Aroma and Flavor to develop with greater complexity.
It is also used alongside temperature control to support extended Fermentation.

960 Hours of Fermentation Does Not Mean Longer Is Always Better
Although 960 hours is one of the most striking aspects of the Process, fermentation duration alone does not determine the quality of Fine Robusta.
What matters more is how the coffee is managed throughout that period.
During Fermentation, both pH Level and Aroma Evaluation are monitored to assess the coffee's development and determine an appropriate endpoint for the Process.
As fermentation time increases, the importance of control increases as well.
The goal of 960 Hours Fermentation is therefore not to ferment coffee for as long as possible or to create the strongest possible Fermentation Character.
Instead, time and control are used together to allow greater complexity in aroma and flavor to develop while maintaining the cleanliness and structure of the coffee.
Drying & Stabilization After 960 Hours of Fine Robusta Fermentation
The development of Fine Robusta does not end when Fermentation is complete.
The coffee then enters the Drying & Stabilization stage to manage moisture and preserve the characteristics developed during fermentation.
The coffee is moved into a dehumidification room where the temperature is controlled below 40°C.
Moisture is gradually reduced to approximately 12% before the coffee enters a Resting Period, allowing the beans to stabilize and the Flavor to gradually reach equilibrium.
When viewed as a complete process, from Selected Yeast Culture, Carbonic Maceration, and Cold Fermentation through 960 hours of controlled fermentation and finally Drying and Resting, it becomes clear that the character of Fine Robusta does not come from one individual technique.
It is the result of continuous attention to detail throughout the entire Process.
Fine Robusta from Nan and Thailand Coffee Excellence 2024
Another example reflecting the potential of Fine Robusta from Nan is the achievement of coffee from Nhamlug, Tha Wang Pha District, Nan Province, which received 1st place in the TCE Robusta category at Thailand Coffee Excellence 2024.
The award-winning coffee is a different lot from the Thailand Fine Robusta selected by Beanslooker.
However, the achievement reflects the working standards, understanding of raw material, and potential for Fine Robusta development among producers from this area.
For Beanslooker, selecting coffee is not simply about whether an origin or producer has received an award.
We consider the quality of the specific lot we taste, the producer's philosophy, the Processing approach, and the consistency of coffee development.
The fact that producers from the same area have been able to create Fine Robusta recognized on a competition stage provides another perspective on the experience and commitment behind coffee production at origin.
An award does not mean that every lot from the same producer will have identical quality.
However, it does provide another indication that the people behind the coffee are taking Fine Robusta seriously and have demonstrated the potential of Thai Robusta through their work.

The Thailand Fine Robusta selected by Beanslooker is a Nan Robusta from Nhamlug, Nan Province, grown at approximately 500 meters above sea level and processed using Yeast Carbonic Cold Fermentation.
What interested us about this coffee is how it retains the fundamental character of Robusta, particularly its pronounced structure and body, while Processing introduces additional layers of fruit, cacao, and spice.
The result presents a different dimension from the conventional image many people associate with Robusta.

This Fine Robusta from Nan opens with Dried Strawberry, bringing a red-fruit character reminiscent of dried fruit.
